Mug apricot slices
ingredients
2 cups semi-coarse flour 1 cup granulated sugar 1/2 cup oil 1 cup milk 2 pcs eggs 1 packet vanilla sugar or a few drops of bourbon vanilla essence Dr. Oetker 3 tbsp walnuts (ground) 700 g boiled apricots
Filling
all apricot compote juice 2 pcs Golden cob 40 g Dr.Oetker 1/2 pcs lemon juice 250 g butter 82% 50 g grated dark chocolate

This recipe is suitable for any occasion , because no one is sure to refuse it. It’s great that we can make a luxurious dessert from a simple compote and a few ingredients. I got this improved recipe from my good mother-in-law, who also taught me how to bake it – I am very grateful to her.

Preheat the oven to 180 degrees – electric oven. Grease a baking tray with butter/oil and dust with semi-coarse flour. Drain the juice from the apricots.

Beat the eggs with the sugar and vanilla until frothy and progressively add the other ingredients. Pour the finished batter onto the baking sheet and arrange the well drained apricots.

Bake at 180 degrees for about 20-30 minutes – every oven is different 🙂

While the pastry is baking make the filling. Put all the juice from the compote , juice from 1/2 lemon and 2 golden ears in a saucepan. Stir over medium heat with a whisk to prevent lumps from forming. Once the mixture starts to thicken so cook for about 5 more mins on the lowest heat. Let the mixture cool – you need to stir the mixture while it is cooling.

When the dough is done baking, let it cool well too. Cream the room temperature butter and progressively add the cooled mixture. Spread this filling all over the baking sheet and grate the dark chocolate on top.

It should be refrigerated – preferably overnight. Enjoy ! 🙂
