If you don’t have time to bake, these muffins are the perfect way to whip up a muffin in just a few minutes. Just mix all the ingredients together and bake for 12 minutes. Watch the video 🙂 For us, the combination of raspberries and chocolate always wins out.
In a larger bowl, whisk the whole eggs with the granulated sugar until frothy. Progressively add oil, milk and mix.

Next, add two cups of semi-coarse flour and cane sugar with vanilla. This will give the muffins a kick 🙂

Add baking powder to the batter and mix briefly

Divide the hot batter and add a tablespoon of cocoa powder to one half.

Prepare a muffin tin, line with paper cupcake liners and fill. You can alternate the batter between white and cocoa as you like.

Fill the cupcakes only half full at first. Place a bar of chocolate and raspberry in the center and fill to the height of the cupcake.

Place the prepared muffins in the oven that you have preheated to 180 degrees and bake for 12 minutes (maximum 15).

Let the cooked muffins cool and then decorate with the cream. Mix the mascarpone with the whipping cream and add sugar to taste. Sprinkle the top with the decorations and chopped chocolate.
