The most important thing is to whip really slowly, otherwise the cream will thin out,” says professional pastry chef Olga Ceralová from Dortisimo.sk.

Cream No. 2: Egg whites and butter The basic egg-white-butter cream is a confectionery classic that can also be used for cupcakes. First, boil the water and sugar and separately beat the softened butter and sugar until foamy. Beat the egg whites themselves until stiff and then gradually fold in the boiled water and sugar. Finally, mix the two masses together – egg white and butter. “The combination of egg whites and butter makes a cream that is easy to work with and can be flavoured in any way you like, but it can also be used in a basic version without flavours,” explains O.
