Mud cake

Mud Cake is the result of a juicy and moist baking process. The inside gets jäädä lähes oozing moist and the pääl crunchy. The mud cake can be varied indefinitely.
Ingredients for ten
4 eggs 2 dl muscovado or cane sugar 150g dark chocolate 200g butter (butter can be used to make the whole cake)2-3 dl wheat flour 1 tsp vanilla sugar 1 tsp baking powder icing sugar
TIP:
You can spice up your mud pie with a splash of coffee or café coffee. Dried apricot pieces add a touch of zest to the cake.
Make the mud cake:
Bring a pan of water to the boil and place a metal bowl over a pan. Chop the butter and chocolate. Wait for it to melt but not to boil.
Separate the egg yolks and whites. In a separate bowl, whisk the egg yolks to a froth.
In a separate bowl, whisk the egg whites and sugar until frothy. Add the dry ingredients in a sieve, shaking to avoid lumps.
Gently stir in the cooled chocolate/fat mixture and the yolk foam. Flavour with vanilla sugar (and coffee, for example).
Gently fold in the whipped egg whites, but keep them well mixed.
Place in a greased loose-bottomed tin and bake the mud cake in a 180°C oven for 25-30 minutes. Use a toothpick to check the doneness of the mud cake. It should be firm and juicy inside.
Just cool the cake and remove it from the pan. Cut into wedges and sprinkle with more icing sugar to decorate the mud cake.
