Mozzarella with homemade sun-dried tomatoes

Before drying, remove the skin. Immerse in boiling water for 1-2 minutes, cool rapidly under cold water, drain, dry and peel.

You can also prepare the dried tomatoes for stocking in a jar if you are going to dry them at about 80-90 °C, but for a longer time, then pour the oil over them along with the garlic cloves and store in the fridge. However, they must be sufficiently immersed in oil.

Tomato mixture with mozzarella: Cut the sun-dried tomatoes into small pieces, drizzle with olive oil, add the diced mozzarella, fresh basil, season if necessary and stir.
