Moussaka – Recipeivas
Moussaka is one of those dishes that you should make in batches. Moussaka only gets better with time in the fridge and reheating.
Ingredients for 8 people
2 aubergines 5 large potatoes
Muscled meat sauce
700 g minced meat (beef, pork or lamb) 1 large onion 4 cloves of garlic 1 tbsp.2 tsp dried oregano or pizza seasoning 2 dl pureed tomatoes 1 tbsp honey 3 tbsp red wine vinegar 1/2 tsp cinnamon 4 bay leavesolive oil, salt and pepper
Cheese sauce
2 tbsp wheat flour 2 tbsp butter 1 l red milk 2 eggs 200 g grated cheese (emmental, gouda)
Tip: if you’re in a hurry, it’s worth salting the aubergines to remove the excess liquid. The cooking time of the moussaka can be shortened.
Peel and chop the onions. Sauté them in a pan in a brisk olive oil. Cut the minced meat in half and put it in the pan to fry. Add the other ingredients for the minced meat sauce and cook until it thickens. Season generously.
In a saucepan, add the butter and wheat flour. Stir until smooth, being careful not to brown. Pour in the milk and bring to the boil, stirring all the time. Remove from the heat and whisk in the grated cheese and eggs. Stir in the cheese sauce and mix well.
Peel and slice the potatoes. Wash the aubergines well and slice them into centimetre slices. Preheat the oven to 350°C.
In the bottom of the baking tray, place the aubergines and potatoes, then the minced meat sauce and top with more potatoes and aubergines. Pour the cheese sauce over the whole thing.
Heat the oven to 160C and bake the moussaka for about 1 1/2h. Leave the moussaka to rest in the oven for at least 15 minutes and then close the oven.
