Moroccan salad plate

The Moroccan salad bowl “chalada” is a dish of zesty flavour, panache and joy. The crowning glory is a lemony, sweet and bitter salad dressing, topped with orange marmalade.
Ingredients for six
1 teaspoon peeled peppers 6 tomatoes 12 pepperonis 12 pepperonis spring onions parsley
Salad dressing
1 tbsp orange marmalade Juice and zest of 1 organic lemon 2 tbsp olive oil 1 clove garlic 2 tsp paprika powder 1 tsp jeera 1/2 tsp salt
Start with the salad dressing: Wash the lemon and grate the zest into a bowl. Squeeze the juice into a bowl. Chop the garlic very finely. Mix the dressing ingredients and set aside.
Soak the peppers and pepperonis. Cut the tomatoes in half and remove the stem. Dice the salad ingredients to a fair size and arrange evenly on a flat plate.
Place the salad dressing on the plate. Garnish the Moroccan salad plate with torn parsley.
