Traditional cakes from Moravia that we all love…
1.
In a little milk make a leaven from yeast and sugar.
2.
Place the flour, egg, yoghurt, oil, a pinch of salt and the rest of the sugar in a bowl. When the starter is activated, add it to the bowl and work it into a soft sour dough with the remaining milk (the milk is only an approximate amount, add it as needed by the dough).
3.
Let it rise in a warm place.
4.
For the filling: mix the cottage cheese, sugar, vanilla sugar and one egg.
5.
Turn the dough onto a board and roll out to about 1cm thickness. Cut out rounds with a glass and fill them with the curd filling. Wrap like buns and place on the baking sheet at intervals. Press the buns gently with your fingers and spread with plum jam.
6.
From the coarse flour, granulated sugar and butter, use your fingers to make a flour mixture.
7.
Sprinkle the crumble over the surface of the buns and bake until golden brown at about 200 degrees.
