Homemade version of mole cake…

Let the eggs, butter stand at room temperature for at least an hour or more. Mix the flour with the cocoa and baking powder. Beat the egg whites with half the sugar until stiff. Beat the butter with the remaining sugar until foamy. Beat in the egg yolks one at a time. On alternate low speed, add lukewarm milk and flour mixture. You can add a few more tablespoons of milk if needed, it should not be cold. Finally, lightly fold in the creamed mixture.

Spread the mixture in a round tin lined with baking paper. Bake at a temperature of approx. 180°C , 25-30 minutes. Let cool after baking.

Filling:Whip the mascarpone with whipped cream and vanilla until stiff and lightly fold in the cottage cheese. Finely grate the chocolate and add to the cream.

On the cooled crust, mark a cut all around about 2 cm from the edge. Using a spoon, hollow out part of the crust, roughly to a depth of about 2-3 cm. Set aside the rest of the crust. Peel the bananas, cut them in half lengthwise and spread the halves thickly on the bottom of the crust. Sprinkle the top with the coarsely crumbled crust and press lightly. Let cool for at least a minute.
