Mixed fruit soup with French seasoning is a big step in the right direction from the traditional potato flour and lime paste “mixed vegetable soup”.

Ingredients for 10

1 bag (approx. 250g) of dried apricots 1 bag (approx. 250g) dried plums 1-2 handfuls dried cherries (or cranberries) 2 cinnamon sticks 1 dl brandy 1/2 tsp salt 1 dl brown sugar water

Place all ingredients except the cherries or cranberries in a saucepan and add enough water to cover the ingredients.

Cover and bring to the boil, simmering gently. Leave to stand for half an hour, stirring continuously. Add the cherries at the end of the soup.

Remove from the heat and allow the soup to simmer;cover the pot for at least a couple of hours; at best it will be ready the next day.

Serve the mixed fruit soup with whipped cream or rice porridge.
