Mixed vegetable salad with pilaf and corn

A tasty vegetable salad with blue mould cheese and sweetcorn.

Wash and dice the tomatoes. Wash the peppers, remove the pith and inner fibres and cut into strips, then into squares. Peel the garlic.

Place the yoghurt in a bowl, drizzle with olive oil, squeeze in the garlic, season with salt and pepper and mix.

Add the chopped tomatoes and peppers, drained corn, grate the mushroom cheese and lightly mix everything together. Let stand briefly to let the flavours combine.

Serve for breakfast with homemade bread or whole wheat baguette. Enjoy!
