Mint and lime granita recipe

Although the first weeks of June have been somewhat atypical as far as temperatures are concerned, as it has brought us quite cool days, it seems that with the official arrival of summer, the thermometers are being encouraged and the heat is being the protagonist in the premiere of this new normality. And to combat it, nothing better than this mint and lime granita, ultra-refreshing and with hardly any calories.
Ingredients
Mint infusion, 4 bags Water, 600 ml Ice, 400 g Mint or mint, 8 sprigs and some more leaves to decorate Limes, 2 Brown sugar, agave syrup or the sweetener of your choice

Heat the 600 ml of water until it is about to boil, remove from the heat and add the bags of mint infusion. Leave to infuse for about 10 minutes, remove the bags and leave the infusion in the refrigerator until it cools completely.
Step 2
Wash the mint or peppermint, remove the thick stems and dry it with kitchen paper.
Step 3
In a food processor or in an American glass with enough power to crush ice, put the mint leaves, ice, sugar or sweetener of choice, whole limes and cold infusion. Crush at maximum power for about 30 seconds.

Step 4
We serve our mint and lime granita immediately garnishing with the mint or mint leaves that we had reserved.
Notes
As I mentioned above, if you do not have any pot that can crush ice, which is probably the case if you crave being in a vacation accommodation that usually have just enough kitchenware, you can adapt the recipe using ice pilé, which is sold in most supermarkets, and is an ice that comes as tiny flakes.
In this case, in a sufficiently large pitcher put the pilé ice, the cold mint infusion, the sweetener of your choice, the mint chopped very fine with a knife, the grated peel of the limes and their juice, mix everything well with a large spoon and although it will not have the same texture of sorbet or slush, you will also love it.
