300 g plain flour 200 g butter 50 g icing sugar 1 pk egg yolk 20 g Cocoa (optional)
Cream
500 g Mascarpone 500 ml whipped cream 33% 100 g white chocolate 100 g dark chocolate 100 g lemon juice 100 g icing sugar 70 g peanut butter
For garnish
Strawberries, orange, mint, chocolate, nuts…

If you’re running out of ideas of what to prepare for the party, I have an idea for you. These tartlets will please everyone.

Mix all the ingredients for the dough (except the cocoa). I made 2 kinds of dough, I added cocoa to one part. Put in the fridge for 30min to set

While the dough is in the fridge, prepare the cream. Whip the cream and mascarpone together until semi stiff. I divided the cream into 4 parts because I was making 4 different flavors. I added melted dark chocolate to one, white chocolate to the second, lemon juice and 50g sugar to the third and peanut butter and 50g sugar to the fourth. Finally, whip all 4 creams until stiff. Put aside in the fridge for now.

Remove the dough from the fridge and roll it through the cling film. Cut out rounds to press into the moulds. I used 5cm diameter moulds and made 50 pieces. Prick with a fork and bake at 170°C for about 12 minutes. Remove from the moulds while still warm and leave to cool on a wire rack.

Fill a pastry bag and fill the tartlets. Decorate with shaved chocolate, fruit, mint leaves and place in the fridge to set for at least 2 hours.

If you increase the cream, mix it with the broken biscuits/cookies and fruit and put in the muffin cups. Yummy.
