Mini pancakes with mascarpone and strawberries

Mini Pancakes:
1 pk egg 1 cup milk 1 cup plain flour 1 packet baking powder 2 tbsp brown sugar 1 pinch salt
Cream:
250 g Mascarpone 1 packet vanilla sugar 1 tbsp caster sugar 300 g fresh strawberries

1. Mix all the ingredients for the mini pancakes in one bowl and let the finished batter rest for about 20 minutes. One tablespoon of batter should be enough for one pancake, which should be fried in a little butter on both sides for about 2 minutes. 2. Mix the mascarpone with the vanilla and icing sugar. Spread each pancake with the cream and decorate with strawberries. You can place them on a plate next to each other or make a tower.
