MINESTRONE – Italian vegetable soup

3 tbsp olive oil 1 pk onion 3 cloves garlic 3 stalks celery stalk 1 pk tomato (blanched) 500 ml tomato passata (puree) salt ground black pepper 1 liter vegetable broth 400 g frozen Vegetable Recipes (minestrone mix) 2 tbsp fresh basil 2 tbsp fresh thyme

Heat the olive oil in a large saucepan and sauté the finely chopped onion until golden

Add the chopped garlic and stir.

Add the diced celery stalk and mix again.
4.
Add the diced tomato, which we have de-blanched (skinned).
5.
Pour the Italian tomato passata, season with salt and pepper.
6.
Top with broth and stir.
7.
Add mixed Vegetable Recipes – minestrone and finely chopped fresh herbs.
8.
Stir and bring to a boil.
9.
Slow cook for about 40 minutes or until Vegetable Recipes are tender.
10.
Serve sprinkled with fresh Parmesan cheese.
