Mille-feuille with blueberries

Baked patties made of flour, honey, egg whites and butter, filled with flavored whipped cream and fruit mixture, surface lightly sugared. Of course, the preparation of this originally French dessert has many variations in both fillings and decorations.

Ingredients:

300 g of cranberries 75 g butter 75 g smooth flour 60 g of liquid honey 50 g of powdered sugar 3 pcs of egg whites 3 tbsp confectioners’ sugar 300 ml whipping cream 50 ml water butter to grease the baking sheet

Procedure:

1. Whisk the egg whites and honey until foamy, lightly stir in the sifted plain flour and stir in the butter melted in the water bath
2. Place the heaps of dough on the buttered baking sheet with a spoon at a distance of about 6 cm, then spread them on the patties with a spoon, place the baking sheet in the preheated oven and bake for about 10 minutes at 180 °C
3. Use a spatula to peel off the baked patties while they are still warm and carefully transfer them to a tray to cool
4. Pour 50 g of icing sugar into a saucepan, add water, bring to the boil, let it boil for 3 minutes, add the cleaned blueberries and continue to cook, stirring constantly, for 2 minutes, then remove from the heat and set aside
5. Add 2 tablespoons of sugar to the whipped cream, stir lightly and fill a pastry bag with the whipped cream
6. Cover the patties with the blueberry mixture, spray with the whipped cream, cover again with the fruit mixture, spray with the whipped cream, cover with another baked patty, lightly dust the surface with sugar and serve immediately.

Recommendation:

This dessert can also be made with puff pastry.
