But sometimes, you just want something simple and satisfying- without all the fuss. This Milanese one pot chicken thigh recipe is the perfect dish for a busy weeknight.
The secret to this dish is in the flavorful tomato sauce. It’s packed with garlic, onion, and a touch of oregano- giving the chicken a delicious Mediterranean twist. Serve it over some hearty Italian bread, and you’ve got a meal that the whole family will love.
Here’s what you’ll need:
1 pound chicken thighs
1 tablespoon olive oil
1/2 onion, diced
3 cloves garlic, minced
1 (14.5 ounce) can diced tomatoes
1 tablespoon dried oregano
Salt and pepper
To make the sauce, simply sauté the garlic and onion in olive oil until softened. Add in the canned tomatoes and oregano, then season with salt and pepper to taste. Let the sauce simmer for about 10 minutes so that the flavors can meld together.
Next, add the chicken thighs to the pot and make sure they’re evenly coated in the sauce. Cover the pot and let it cook for 25-30 minutes, or until the chicken is cooked through.
