Mexican Tomato Soup

Soup of tomatoes, chicken breast, broth and other ingredients.

Ingredients:

400 g of canned tomatoes 1.5 l chicken stock 4 pcs garlic cloves 2 pcs of chicken breast 1 pcs large dried chillies 1 pc onions 2 tbsp olive oil 1/2 tsp ground cumin juice of 2 limes ground pepper red onion and fresh cilantro to serve salt

Procedure:

1. In a saucepan in heated oil, let the peeled finely chopped onion and peeled crushed garlic cloves soften for 5 minutes
2. Stir in the crushed chilli, ground cumin, tomatoes, chicken stock and heat for a while, then blend with a stick blender and bring to the boil
3. Add the cleaned chicken breasts cut into strips and cook until the meat is soft (about 10 minutes)
4. Stir in the lime juice, season with salt and pepper to taste and serve with peeled, sliced red onion and fresh coriander.
