Mexican Salad
The Mexican salad is made from a variety of ingredients and is very tasty and fresh thanks to the lime dressing.
Ingredients for six
1 teaspoon of chickpeas, pickled 2 dl of black beans, pickled 1 red pepper 2 handfuls of cherry tomatoes 1 teaspoon of corn kernels1 bunch of fresh coriander
Salad dressing
3 organic limes (1 for garnish) 2 tbsp olive oil 1 tsp cane sugar
Peel and grate the peel of two limes. Squeeze the juice from the limes. Stir in myös olive oil and sugar. Drain the chickpeas, beans and cornflakes in a colander. Rinse and set aside to dry.
Wash and dice the peppers and cherry tomatoes. Chop the coriander.
Combine all the salad ingredients in a bowl and toss to combine. Drizzle the dressing over the salad and toss again so that the salad starts to marinate in the dressing. Garnish the Mexican salad with coriander sprigs and lime wedges.
