An interesting Mexican appetizer of baked Chio Tortillas Touch of Salt topped with bean paste, sprinkled with grated cheese.
Ingredients:
Spices for 2 servings:

Chio Tortillas Touch of Salt

of sour cream

hard grated cheese
2 pcs
jalapeño chilies
cilantro garnish
For the beans:
1 can (400 g)
red beans in brine
2 tablespoons
oil
1 piece
peppery semi-dry sausage (ideally Mexican)
1 pc
medium onion
1 pc
garlic clove
salt
Procedure:
Heat the oil in a pan, add the diced onion and sauté until browned
.Remove the sausage casing, mash it with a fork on a cutting board and add it to the sautéed onions, sauté for about 3 minutes, then stir in the finely chopped garlic, sauté for about 30 seconds and add the drained beans, mash everything in the pan to a coarse paste, if the mixture is too dry, add a few tablespoons of the bean brine, season with salt

Place a little bean paste on each triangle and sprinkle with cheese, arrange on a baking tray (you can also put two layers on top of each other)
Place the baking tray in a preheated oven at 200 °C and bake for 10 minutes
After removing from the oven, garnish with sour cream, sliced hot pepper and chopped coriander and serve immediately.
