Mexican Quesadillas

2 pcs tortilla 250 g chicken breast 5 tbsp corn 1 pcs red pepper 1 pcs yellow pepper 1 pcs spring onion 3 pcs fresh coriander stalk 100 g grated cheese 20 ml olive oil 1 tsp Piri Piri pepper 1 pcs can of beans Kotányi four-colour pepper grinder Kotányi four-colour pepper grinder Kotányi sea salt Kotányi garlic granulated
procedure

Fine chop the peppers and spring onions. Wash the coriander and chop. Wash and cut the chicken breasts into smaller cubes

In a bowl, mix 4 tbsp olive oil with 1 tsp Piri Piri pepper. Mix the prepared marinade with the chicken breast pieces and let rest for a while. Heat the olive oil in a frying pan and fry the chicken breasts.

Before the end, add the Vegetable Recipes and corn and mix everything well. Strain the beans through a sieve and catch the brine. Puree the beans with half of the brine. Season with salt, pepper, garlic seasoning and mix well.

Spread the tortilla halves with the prepared bean puree, chicken pieces, Vegetable Recipes, shredded cheese and fold the tortilla over.

For the final preparation, there are 2 ways to choose: 1. Bake the tortilla in the oven at 180°C for about 10 minutes or bake in a pan with a little oil.

Cut the cooked quesadillas in half and serve. Best served with a variety of dips such as guacamole, pico de gallo or flavoured sour cream. Enjoy!
