Mexican Beans

Roasted kabanos with onions mixed with beans and other ingredients, sprinkled with grated cheese, baked in the oven.

Procedure:
1. Cut the cabanos into rounds, the peeled onion into larger cubes, and the washed tomatoes into larger pieces
2. Fry the cabanos rounds in a large frying pan to render some fat, then add the chopped onion and stir-fry briefly
3. Stir in the beans, tomato chunks, salt and pepper, black and cayenne pepper and simmer under a lid for about 15 minutes on low heat
4. Season the finished beans with pepper once more, divide into bowls, add a few tortilla chips to each serving, a spoonful of sour cream and sprinkle each bowl with a spoonful of grated cheese
5. Bake the bowls briefly in the preheated oven to melt the cheese and sprinkle with finely chopped parsley when serving.
