You’ll love the combination of flavors of mashed potatoes with spinach. Excellent side dish whether with meat or fish.
1. Clean, wash and cut the potatoes into cubes. 2. Put them in a saucepan, along with water (so that they are covered) and season with salt. 3. Bring to the boil. Boil for 15 minutes or until soft. 4. Drain the water. 5. In the meantime, prepare a frying pan in which you melt the butter. 6. Add the fresh baby spinach, which we have cleaned from the stems and cut into fine strips. 7. Sauté, stirring occasionally, for about 10 minutes. 8. Season the drained potatoes with salt and black pepper as needed. 9. Add butter and warm milk. 10. Whisk by hand to desired consistency. 11. Add the spinach and stir lightly into the puree. 12. Serve with meat, fish or on its own. 13. In the children’s version, save the salt and black pepper.
