Cook the potatoes first.

Clean the potatoes, cut them into cubes, add them to the casserole, add water to cover them and salt them to taste. Cook under a lid for 15 minutes. Drain.

Melt the butter in a pan and add the diced red snapper. Sauté together for a few minutes.

Add a few slices of butter to the drained potatoes, add more salt to taste and run through a colander.
