1. Chop the carrots, celery, dill and lemon zest. Then add the salt and sugar and spread over the salmon fillet. The bone still needs to be removed beforehand. When salting, we must take into account the thickness of the fillet. There must be more salt on the front and less on the tail. 2. Cover the fillet with one kitchen towel soaked in white wine and marinate in the fridge for about 4 h. 3.
