Recipe for a tasty kidney relish from Chinese cuisine. It is kidneys soaked in milk, then marinated together with mushrooms and meaty peppers, marinated in brine, served cold.
Ingredients:

Procedure:
Slit the pork chops lengthwise, remove the urinary ducts and veins, place them in a bowl, pour milk over them and let them soak overnight to make them more tender and get rid of the smell
The next day, rinse the kidneys, cut them into noodles, boil them in unsalted water for 1 minute, otherwise they will harden, drain the water and leave them to drain
Place the kidneys in a glass bowl, mix with strips of paprika and slices of cooked mushrooms, pour the marinade from the above ingredients, let marinate in the fridge for at least 24 hours
Marinated kidneys on a plate sprinkle with chopped parsley, serve as an appetizer alone or with bread.
