Marinated Pork Chops, Grilled

Asi 2,5 cm high pork chops with bone, marinated and then grilled on an outdoor grill. Recipe by chef Zdeněk Pohlreich.

Ingredients:

4 pcs large chops, each should be about 300 g and 2,5 cm in height 10 pcs of black peppercorns 5 pcs of allspice/td> 3 pcs cloves 2 pcs bean leaves /td> 1 pcs smaller onion cut into rings 560 ml cold water 280 ml hot water 80 ml walnut or hazelnut oil (or olive oil) 50 ml bourbon 60 g brown sugar 60 g coarse salt piece of cinnamon

Procedure:

1. After running cold water over the rinsed chops, pat them dry with a paper towel, place them side by side in a low bowl so that they are only in one layer
2. Sprinkle the sliced onion, bay leaves, cinnamon, peppercorns, allspice and cloves over the meat
3. Put the salt and brown sugar in a large bowl, add the hot water and whisk everything with a whisk until the sugar and salt dissolve
4. Stir in the cold water, bourbon and half the oil, pour the mixture over the chops and turn them in it a few more times
5. Cover the prepared meat with microtene foil and leave to marinate in the fridge for 2-4 hours, turning the chops several times during marinating
6. Heat the charcoal coals, spread the wood chips on them, soaked in water and then drained (soak them in water for at least 1 hour), brush the clean grill grate with fat or oil
7. Remove the meat from the marinade, drain and then wipe with a paper towel to remove the marinating spices
8. Place the chops on the center of the grill, away from the fire, cover the grill and grill in the smoke for about 20 minutes, then move the chops directly over the hot coals, grill them uncovered for 4-7 minutes on each side, turning them 90 degrees every 2 minutes to create a fancy grid on the crust
9. Remove the finished chops from the heat, let them rest for 3 minutes, then serve immediately.
