Cut the herbs finely and in a bowl mix with the olive oil, white wine vinegar and 1 grated garlic clove. Season with salt and pepper and mix thoroughly.

Slice the washed aubergine into thin slices or rounds. Arrange them on a plate and salt thoroughly. Then wash them so they are not too salty and dry them thoroughly.

Bake them in a little olive oil on a hot grill pan. Transfer the roasted aubergines to a plate, brush them with the prepared herb marinade and leave them to marinate for a while.
