Marenkijäätelö is a “lighter” version of kotijäätelö. The Marenkijäätelööögets the proteins from the top of the cake nicely. You don’t need a machine to do the job, you can do it easily with a bowl and a whisk.
Ingredients for six
2 egg whites 2 dl sugar 2 tsp vanilla sugar 2 dl cream 2 lime juice
Tip: Meringue can be seasoned as imaginatively as any other drink.
Whip the egg whites and sugars. The secret to good whipped cream: room temperature eggs, clean, dry ingredients and a good sweetener. Whip the cream separately. Line a freezer tray with cling film. Combine the whipped cream in the bowl, squeeze the lime juice over it and mix gently. Cover with cling film to prevent odours from the freezer from sticking to the ice cream. Place in the freezer for half an hour and stir gently again. Then leave to cool in peace for at least four hours. The meringue is very hard when frozen, but melts quickly, so be careful with the timing of serving. The foil on the bottom will help with removal.
