Mangokana comes with a traditional sour and mild sauce, which is worth memorising so you don’t need to use the ready-made ones from the shop.
Ingredients for four
500g chicken in wok strips 1 ripe mango 1 red pepper 1 yellow pepper 3 spring onions 1 chilli 2 cloves of garlic 2 tbsp dark soy sauce

2 dl water 3 tbsp rice wine vinegar 2 tbsp cane sugar 3 tbsp ketchup 1 tbsp cornflour salt and pepper
Stir the sauce ingredients and season to taste.
Heat the wok pan until hot. Add the oil, chopped chilli, garlic and chicken pieces. Add the soy sauce to the wok. Quickly stir-fry the chicken until cooked through and set aside.
Add the chicken and quickly stir-fry the peppers and onions.
Throw the chicken back into the wok. Add sliced mango. Freeze for a minute.
Add the sauce to the mixture. Keep stirring the wok. As soon as the sauce comes to a boil, remove the mango chicken from the plate and serve.
