Mango and cookie ice cream sandwich, an easy recipe to make at home

The world of ice cream is a world that runs parallel to any type of recipe both pastry and cooking in general. It is not easy to make ice cream at home. It is not easy to make ice cream without an ice cream maker and we should never underestimate this peculiar section of gastronomy. Because making ice cream goes far beyond choosing a flavor, preparing a mixture with cream and egg and freezing, since there is something tremendously important: how to freeze it. If we do not take this into account we will be left with a block of ice cream flavored with what we have chosen, not a creamy ice cream of those to which you pass the tongue and it is a delight.

As a general rule, I do not usually recommend that you make ice cream at home but this time I found a mixture that works almost alone and that you will have to take care very little to get great results. A mango and coconut ice cream perfect for filling a sandwich, for which we will use the mythical Lotus spiced cookies. Yes, those that are served with coffee in many places and can remind us of Christmas. You can find them in supermarkets and they will give a very special touch to our ice cream sandwich.

The grace is to crush very well the mango ice cream with the rest of the ingredients and then add the whipped cream with wrapping movements. Nothing else. You will have to find concentrated coconut milk, which is not the same as normal coconut milk. If you do not have an ice cream maker, the possible substitution is to remove the ice cream mixture from the freezer every 15 minutes and stir it as much as possible, so that ice crystals do not form, which are then unpleasant when eating the ice cream. Can this version be made with other fruit? Of course. Peach, papaya or metis would be great. By the way, if you like mango, I recommend you to make a mango and prawn Thai salad or a mango crema catalana, very Spanish but with that tropical touch. In addition, the crema catalana also freezes well once made.

Once the sandwiches are made, before eating them, put them back in the freezer for a while to let them set and, finally, we could finish them with some grated dried fruit or nuts to cover the edges. Well, and we could dip them in chocolate too – imagination is completely free!

How to make a mango ice cream sandwich

Ingredients

. Lotus cookies, 30 pc Mango, 1 pc Condensed coconut milk, 320 g Coconut milk, 50 g Orange juice, 50 ml Whipping cream, 150 g

Step 1

Peel the mango and cut it into small squares, removing the central stone. Freeze those squares completely for at least 12 hours.

Step 2

In the blender beaker, add all the ingredients for our ice cream except the cream, which must be chilling in the fridge, and add the frozen mango pieces. Blend very well until you get a very fine cream but with consistency. It should not have lumps, that is the most important thing. If we see that it has lumps it is advisable to strain. Cool in the refrigerator.

Step 3

With the very cold whipping cream put it in a bowl, also cold (it is advisable to put it in the fridge), and whip until it is very dense with the help of a whisk. The perfect point will be when we turn the bowl upside down and the cream is firm, it does not fall. Be careful not to overdo it because if we beat too much the cream will turn into butter and there will be no turning back.

Step 4

Add the cream to the previous preparation, with enveloping movements and patience until everything is well integrated. When everything is well mixed, pour the preparation in a barqueta and take it to the freezer. Every 15 minutes take it out and mix everything. The optimal would be to put it in an ice cream maker and that the process in it began, but if we do not have this will be our best option.

Step 5

When the ice cream is already very hard it will be time to stop trying to stir it and leave it in the freezer overnight to settle.

Step 6

Cut pieces of ice cream like for a sandwich and put them inside two cookies. Press lightly and polish the sides well to make it look nice. Freeze the sandwiches already assembled or consume at the moment.
