Mandarin cheesecake

200 g biscuits 100 g butter 500 g soft cottage cheese or mascarpone 250 g sour cream 160 g powdered sugar 2 tbsp plain flour juice of one tangerine salt 2 eggs
Mandarin coulis
3 whole mandarins 1 tbsp sugar 2 tbsp water 1 tbsp Solamyl fine cornstarch Dr.Oetker

A delicious and refreshing snack.

First, crush your biscuits, then mix them with butter (room temperature). Line a cake tin (24cm) with baking paper. Spoon the biscuit mixture into the cake tin and use your fingers or a spoon to pinch it together to make it evenly.

Make the cream by putting all the ingredients in a bowl and using a hand mixer to blend them together. Pour the cream into the biscuit tin. Tap the mould a couple of times to get rid of air bubbles.

Preheat the oven to 160 degrees and bake for about 45-50 minutes. When the edges are golden brown the cheesecake is baked, with a gelatinous shake in the middle. Once baked, leave in an open oven for about 1 hour

Mandarin coulis prepare by mashing the mandarin oranges and boiling them with the sugar and a little water, then straining them through a sieve. Mix the solamyl with 25 ml of water and pour into the strained juice, boil for a while until the coulis has thickened. Pour the coulis over the cooled cheesecake and garnish with fresh mandarin oranges.
