Carefully wash and clean the apples from dirt and cut them into quarters

Then grate the apples on a coarse grater with the skin and cores.

Prepare a three- to four-quart glass jar made of glass. Pour the grated apples into the jar. Immediately pour cold water over them, about 5 cm from the top of the bottle, to leave a free space for fermentation.

Cover the jar with a saucer and leave it in the kitchen to work for 10 days. Stir at least 2 times each day.

After 10 days, strain the juice through a coarse sieve. The solid parts that the sieve has caught can be thrown away in the compost heap.

Cover the resulting product – the juice – and refrigerate it – ideally in the pantry for 20 days. Do not stir and especially do not uncover.
7.
After 20 days, strain the liquid through a sieve with cheesecloth.
