Madras Egg Curry

Curry spices stir-fried with onions, mixed with puree and lemon juice, served with hard-boiled eggs and rice.

Ingredients:

6 pcs hard-boiled eggs 2 pcs garlic cloves 1 pk larger onion 6 tbsp tomato puree 1 tbsp curry spice 1-2 dcl water lemon juice oil

Procedure:

1. In a saucepan, sauté finely chopped onion and garlic in a little oil
2. Add a heaped tablespoon of curry spices, stir and sauté on a medium heat source for another 2-3 minutes
3. Add tomato paste, 1-2 dcl of water, season the curry with salt and lemon juice, stir again and cook on low heat for 6 minutes
