Madeleines with zucchini

Today we offer you the recipe for zucchini madeleines.They are wonderful served hot from the oven with butter (or without butter if you are on a diet).

These madeleines can easily be frozen is eaten later. They would be good served with soup, or even with a main course.

Prefer small zucchini, they will release less water, something that will give the desired consistency to the dough well.

Ingredients for 12 madeleines:

120 g flour 2 small grated zucchini 3 eggs 4 tablespoons milk 2 tablespoons grated Parmesan 1/2 chopped onion 1 teaspoon olive oil 1 teaspoon baking powder Salt, pepper and cumin

Preparation of the zucchini madeleines:

Heat the olive oil in a saucepan and then sauté the onion, add the grated zucchini and cook for 7 minutes.

Combine the flour with the yeast in a bowl, then add the milk and the beaten eggs.

Add to this mixture the cheese, zucchini, salt, pepper and cumin then mix well until you get a slightly liquid paste.

Disperse the batter into molds, then bake the zucchini madeleines for 10 minutes at 200°C.
