1. Make a sourdough starter with the yeast, lukewarm milk and sugar. In the meantime, mix the flour, a pinch of salt, melted butter, egg yolk in a bowl and finally stir in the sourdough starter. Using your hands, make a stiffer dough, cover and leave to rise. 2. Meanwhile, finely grate the cabbage. Season with salt and drain the juice. Caramelise the sugar in a little lard and add the cabbage, stirring constantly. Season with pepper and simmer until tender. 3. Roll out the risen dough on a floured board. Cut it into squares, put a dollop of cabbage filling in each of them. Close the cabbage rolls with your hands and place them on a greased baking sheet. Brush them with melted butter and leave them to rise for a while. 4. Place them in an oven preheated to 180°C and bake for about 25 minutes.
