Luxe routine recipe for corned beef hash and eggs

If you’re anything like me, than you love a good routine. You know, the kind of routine that makes you feel productive, put-together and just downright happy. Well, I’ve got good news for you my friend – this luxurious corned beef hash and eggs recipe is the perfect addition to your daily routine. Trust me, once you’ve tried it you’ll be hooked!
Ingredients:
1 lb corned beef, diced
1 small onion, diced
1 small potato, diced
1 tbsp olive oil
2 eggs
Salt and pepper to taste
Instructions:
In a large skillet over medium heat, sauté onion and potato in olive oil until softened.
Add in the corned beef and cook until browned.
Create two little divots in the hash and crack an egg into each one.
Cover the skillet and cook until the eggs are cooked to your liking.
Season with salt and pepper and serve!
Where you can use it :
I like to have this dish for breakfast, but it would also make a great brunch or lunch. It’s perfect for when you want something hearty and filling, but don’t want to spend hours in the kitchen. This dish is also great for meal prep – simply cook it up on Sunday and enjoy it all week long!
Tips :
If you’re not a fan of corned beef, feel free to use any other kind of meat you like. Bacon, ground beef or sausage would all work well in this dish. You could also add in some chopped green peppers or other veggies if you’d like
