Luhačovický špaček

A dish that was served in restaurants in the 70s-80s. It was a minced meat roll filled with sausage, baked in the oven, served with potatoes, mustard and onions.

Ingredients:

500 g of mixed minced meat (beef and pork 1:1) 2 pcs of Ostrava sausage links 1 pc onions 1 pc eggs 3 tbsp breadcrumbs 1 tbsp chopped parsley sweet red pepper full fat mustard ground pepper salt For boiled potatoes: 500 g of potatoes 1.5 l water 1 tsp of cinnamon 1 tsp salt Other: baking paper onions and full fat mustard to serve

Procedure:

Mix ground meat with egg, breadcrumbs, chopped onion, parsley, season with sweet red pepper, pepper and salt, mix thoroughly.

From the meat, make larger patties, which are smeared with mustard, place a piece on the ends of the cut sausage and wrap, the ends of the sausage should protrude out of the roll.

Place on a baking tray lined with baking paper, bake in the oven at 180 °C for about 25 minutes, occasionally covering the rolls with a little water.

Serve with boiled potatoes, mustard and chopped onions.

Potato preparation:

Wash, peel and cut the potatoes into larger cubes, rinse them thoroughly again, then drain thoroughly

.Put the drained potatoes in a pot and pour cold water over them

Salt the water, season with cumin and boil for about 15 minutes until the potatoes are soft, then drain the water and serve.
