Lskisoosi

Läskisoosh, or pork sauce, is a national delicacy without equal. Making läskisoos is quite easy, although you should take your time to get a mouth-watering result.

Ingredients for eight

n. 800g pork chops 3 onions 1 tbsp butter 1 tbsp wheat or rye flour (rye flour will give a darker and tastier sauce) water salt and pepper

Slice the pork chops thinly. The fat will disappear as it simmers. Peel and chop the onion.

The risotto cooks nicely in a large pan with a lid or in a barrel. Put some butter in the pan and start to sauté the onion until sweet. When the onion is golden, set it aside for a moment to wait.

Lisää lämpöä and add the pork chops in small batches to the pan. Fry them until crispy. Lightly grind and add 5 dl of water and the onions. Season with salt and pepper.

Let the risotto simmer on low heat (with a quiet smile) for an hour under the lid. Stir with a whisk. Be careful not to get any at the bottom.

Weigh the läskis in the jar. Serve with cranberries, boiled potatoes and pickles.
