Lotus cheesecake

300 g Lotus biscuits 150 g butter 500 g Mascarpone 250 ml whipping cream 200 ml sour cream 250 g soft curd 1 cup Lotus spread fine 30 g Lotus biscuits for decoration

I wanted to make a Lotus Cheesecake on request but I couldn’t find any suitable recipe, so I put together several, took what I wanted from each and made a perfect cheesecake for me and my family, which I have been making ever since 🙂

First, crush 300 grams of Lotus crackers (I did in a blender). Mix with 150 grams of butter and spread on the bottom of a cake tin (I use a bigger tin to cut more of it). Place in the fridge to chill while you prepare the others

Whip the whipping cream. In another bowl, whisk the mascarpone with the sour cream and cream cheese. Then open the Lotus Spread, scoop out into a cup/cup – it’s up to you how much, depending on how sweet you want the filling. I put about 2 large spoonfuls. Then put that spread to melt (I put mine in the microwave) and then pour in the filling and whisk together with the filling. Finally, add the whipped cream and mix gently.

From the refrigerator, take out the hardened cake and put the whipped mixture on top. Put the melted of the Lotus spread back into the cup, it’s up to you what layer of spread you want to have on top. I put about 3 large spoonfuls of the melt in the microwave. Then pour on top of the cheesecake. The spread that is left over can be used to spread on Christmas cookies, for example 🙂

Finally, crush (I put in a bag and pound with a meat mallet – as they can be less crushed than for the crust) 30 grams of Lotus crackers and decorate the cheesecake all around. You can also make the whole thing, it’s all about the imagination 🙂 Leave to set in the fridge, once set remove the edge of the mould and enjoy 🙂
