Lobster Po Devil

One of the variants of serving lobster.
Ingredients:

Procedure:
1. Brush the live lobster in cold water, put it in boiling water with salt, vinegar, onion and pepper, hold it under water for a while with a boiling spoon and cook for about half an hour
2. Cut the cooked lobster lengthwise, remove the guts and carefully remove the meat
3. Twist the claws, cut off the top shell and remove the exposed meat
4. Then cut the links connecting the claws to the shell and take out the meat
5. Cut all the meat into pieces and heat it
6. In a small saucepan placed in a hot water bath, melt the butter, add the finely chopped parsley, the juice of 1/
2 lemons, ground pepper, salt and thicken the egg yolks
7. Put the mustard in a small bowl, add the butter mixture in batches and stir until a smooth cream is formed
8. Place the warm lobster meat on a warmed dish, pour the warm sauce over it and garnish with egg slices and lemon slices.

– Freshwater fish can be prepared in the same way.
