Loaded herring rolls

Recipe for pickled herring rolls filled with cucumber, capers and onions. The recipe comes from Sweden.

Procedure:
1. Slit the herrings down the belly side from tail to head, remove the guts, cut off the heads and soak overnight in cold water
2. Then dry the fish, remove the skin, debone, fill with cucumber and caper chips, onion rings, add capers and roll into rolls
3. In a bowl mix vinegar with a little water, sugar and crushed pepper, add the rolls (they should be completely covered with the solution) and leave in the refrigerator for at least 2 hours.
