Noodle salad is quite a hearty dish, which is good for lunch. It can be topped with chicken or fish if you like.1 red pepper 1 red onion 1 tablespoon soy 1 teaspoon dark sugar 150g noodles dry 2 tablespoons Thai chilli sauce; chillies; bunch of coriander
Coconut dip
1 avocado 1 lemon juice 2 tbsp coconut cream salt
Tip If you want a more savoury salad, fry fish or chicken fillets (pictured) on top.
Peel and chop the avocado in a bowl. Mash it with the lemon, coconut cream and salt to a smooth paste.
In a wok, add a splash of water, soy and sugar. Bring the noodles to the boil and set aside. You can cook the noodles in a saucepan, so the noodles don’t stick.
Separ a few leaves from the thick ones for garnish and chop the rest for the wok. Chop the chives, red onion and bell pepper. Wok them quickly in a rich stir-fry and season with Thai chilli sauce.
Add the noodles to the pan, cook a couple of minutes in a hot pan and then serve in a serving dish. Garnish with chilli slices and coriander leaves.
