Beef back, baked tightly tied with string as a roll, served sliced and served with sauce prepared from the fat.

Procedure:
1. Wash and dry the beef, use a sharp knife to cut holes in the beef along the grain, cut the bacon and carrots into fries and pierce the meat

7. Season the fat with mustard, lemon juice and finely grated lemon zest, bring to the boil and soften the sauce with cream
8. Let it boil, season with salt, pepper and honey

Recommendation:
A suitable side dish is boiled potatoes or bread dumplings.
