Linzer cookies filled with chocolate filling
ingredients
Dough: 450 g plain flour (T650) 250 g hera / palmarin / butter 200 g powdered sugar 1 packet vanillin sugar 1/2 packet baking powder Dr.Oetker 2 pk egg yolk 1/2 pk grated lemon zest, juice FILLING : 100 ml whipping cream (33%, chilled) 150 g milk chocolate currant jam (thicker jam) colourful confectioners’ beads for decorating

Generous linzer cakes are sure to please big and small.
1.
Sieve the flour and grate the cold butter on a grater add the rest of the ingredients.

Make a smooth dough see below, photo, wrap it in cling film and put it in the fridge to harden.

Place the dough on a floured work surface and roll out to 0.2mm using a pastry cutter to cut out different shapes.Place on a baking tray lined with baking paper. Preheat the oven to 180 degrees and bake for 10-12 minutes.

Spice the ingredients for the filling.

Heat the cream until hot add the chocolate broken into smaller pieces stir until the chocolate is melted give it a good cool.

Whip the cooled chocolate until frothy.
7.
Fill the prepared cookies with the filling or spicy currant jam and decorate as desired.
