Lingonberry Soup

Soup of boiled waste parts of ling and Vegetable Recipes, finally accompanied by ling meat, served with dill and garnished with lemon rings.

Procedure:
1. Gut and clean the ling, place the head, tail, fins and cut out spine in a pot of cold water and boil over a low heat source for 20-30 minutes with the onion whole, collecting the foam, strain the finished broth
2. Fry the finely chopped carrots, parsley and potatoes in butter, pour the strained broth and simmer on low heat for 15-20 minutes
3. At this stage, add the chopped ling meat, spices and salt to the soup and cook for a further 15-20 minutes
4. Just before serving, add freshly chopped dill to the soup and garnish each portion on the plate with two lemon wedges.
