Lime Creams Candy Recipe

Lime creams are bright, refreshing creams that offer white chocolate. If you prefer, you can skip the chocolate step and serve the creams with plain, sweetened candied lime or sugar or green sprinkles.
What you’ll need
4 cups powdered sugar (sifted) 1/4 cup butter (softened) 3 tablespoons lime juice 1/8 teaspoon salt 3/4 cup whipped cream 3 teaspoons lime 5 drops green food coloring 1 pound white chocolate 1 tablespoon shortening Optional: Green crystallized food coloring
How to make it
1. Cover a cookie sheet with aluminum foil.
2. Combine 2 cups powdered sugar, butter, whipped cream, lime juice, salt, lime zest and food coloring in a large mixing bowl. Mix on medium speed until smooth and evenly combined.
3. Slowly add the remaining powdered sugar in batches, stopping frequently to scrape down the sides of the bowl. Mix until well blended. If the mixture is too stiff, add a little more lime juice.
If too sticky, add a little more sugar.
4. Roll out to ¾ inch in diameter and place on a cookie sheet lined with aluminum foil.
5. Refrigerate for 30 minutes.
6. Melt white chocolate shortening in microwave or double boiler. If you are coloring the chocolate, mix in crystallized food coloring at this point.
7. Rinse the cream centers in the melted chocolate one by one and return to the baking sheet. Once all the centres have been dipped, return the sheets to the fridge before serving the confection. If you wish, you can add the desired baking powder to the candy.
