Ligurian rabbit recipe

To assemble

4 servings 4 pieces of rabbit thighs parts of plain flour coated with olive oil 3 cloves of garlic 3 pcs. 1 handful of green and black olives 400 g peeled nice tomatoes 400 ml white wine salt ground pepper

Method of preparation

1 Drain the rabbit portions, season the meat well with salt and pepper and roll lightly in flour. Heat the oil in a frying pan and fry the meat well, about 5 minutes on each side. Add the chopped garlic, anchovies, rosemary, olives and tomatoes. Finally, pour the wine over everything.

TIP: Crispy roast chicken

2 Bring the pot to the boil, cover, reduce the heat and simmer for 60-70 minutes. Serve the chicken with mashed potatoes and chopped leeks, peas and gravy.
