Here’s the recipe for Light Onion Soup Au Gratin, a delicious, body-warming soup that’s perfect for a quick, light dinner.
Ingredients for 4 people: – 5 points / person –
5 medium onions 1 tablespoon light butter ( 15 g) 2 cloves of garlic 1 tablespoon flour( 20 g) 1 l fat-free stock 4 slices of bread ( 25 g each) 50 g grated parmesan cheese 1 bay leaf salt, pepper
Preparation:
Slice the onions then sauté them with the butter in a saucepan for 15 to 20 minutes, stirring regularly.
Sprinkle with flour then add the chopped garlic and stir.
Pour in the hot broth, add the bay leaf, salt and pepper then cook for 20 minutes.
Place the bread slices on an oven tray covered with baking paper and bake for 10 minutes.
Divide the soup between 4 soup bowls then top each serving with a slice of bread.
Then sprinkle with cheese then gratinate in the oven for a few minutes.
