These potato skins are easily fixed and light. But you can add a little shredded cheese to the Cheddar potato skins or add some crushed bacon.
Microwave-cooked potatoes make this appetizer quick and easy to prepare. Serves 2 but can easily be scaled up to make a family snack.
The skin of the plain potato is fried with a little butter and sliced with chopped peppers. Use butter-flavored chips and light sour cream to make this appetizer lower in fat.
These potato skins are relatively low in fat, but some cheddar or low-fat cheese can be added with the scallions.

What you need
1 large potato (rosette) Optional: Olive oil salt to taste (seasoned) black pepper to taste 2 tablespoons chopped (chopped) 2 tablespoons sour cream (plain or reduced fat)
How to make it
Wash the potatoes and rub with olive oil if desired. In some places, pull the potato out to allow the steam to escape. Cook the baked potatoes at 100% power for about 8-12 minutes or until fork tender. After cooking, remove from oven; wrap in foil and let stand 5 to 10 minutes. Dissolve potatoes and cut in half lengthwise. Let the potatoes cool until ready to handle. Gently scrape outward, do not scrape down to the skin (leave a little potato around the edges and bottom). Reserve leftovers and store in the refrigerator for another meal if desired. Warm the broiler and spray a small cooking pan with cooking spray. Season with seasoned salt and pepper to taste. Sprinkle sliced chopped cabbage over each one. Place the potato dyes in the prepared pan. Lightly drizzle the potatoes with gently seasoned cooking spray or some melted butter. Place the chicken until golden brown. Remove the skin from the broiler potatoes and spread with 1 teaspoon of sour cream. Serve warm.
